Coffee Rum Cookies
Great Christmas cookie recipe

Ingredients:
2 eggs
1 1/2 cups all-purpose flour
1/2 cup butter
1 cup packed brown sugar
1 tsp. instant coffee
1/2 tsp. rum extract
1 tbsp. boiling water
1 1/2 tsp. baking powder
1/2 tsp. salt
1 cup chopped pecans


Baking your cookies
In mixing bowl cream together butter and sugar.
Add rum extract, eggs and beat well.
Dissolve instant coffee in 1 tbsp. boiling
water, add to creamed mixture.In mixing bowl
stir together flour, salt and baking powder.
Stir into creamed mixture and chill for
2 hours.
Drop teaspoons of chilled dough onto nuts, roll
to coat.Please balls 2 inches apart on greased cookie sheet.
Bake at 350° for 8 to 10 minutes.
Makes 4 dozen
